A new recipe from Healthy Meals Ibiza

Yummy Stuffed Sweet Potato w. Perfect Green Dressing
 
Ingredients for two:
2 medium sweet potatoes
250g beans (black or butter)
1 bunch kale
2 tbsp olive oil
1 garlic clove
Salt and pepper
 
Perfect Green Dressing:
1 garlic clove
1 big avocado
3/4 cup basil
1/4 cup parsley
3/4 cup chives or green part of spring onions
Juice of one medium lemon
2 tbsp apple cider vinegar
5 tbsp olive oil
Salt and pepper
 
In a food processor, blend together all the ingredients for dressing.
 
Leave the beans to hydrate in water overnight. Change the water and bring to a boil. Throw away the water, put fresh water and bring to boil again. Repeat this process twice again and last time put one bay leaf, baking soda and salt.
 
Meanwhile, preheat the oven to 190 Celsius degrees. Line a baking sheet with parchment paper.
 
Using a fork, poke multiple holes into both sweet potatoes. Place potatoes in oven and bake for about 45-60 minutes, or until tender.
 
When beans are cooked, drain them and put aside.
 
Heat olive oil in a saucepan and cook garlic for a couple minutes, until fragrant and before brown. Add kale and toss to coat. Add 1/3 cup fresh water and cover for 5 minutes. Remove cover, reduce heat to low, toss kale and cook for more 15 minutes or until kale is a desired texture, adding more water as needed. Add beans to kale and season with salt and pepper to taste.
 
Cut sweet potatoes in half and top with beans, kale and amazing dressing.
