Vegan Hamburger Recipe from Healthy Meals Ibiza

Makes 4 hamburgers:
400g chickpeas, soaked over night, boiled, drained and peeled
300g sweetcorn
Half a bunch of fresh coriander
1/2 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Zest of 1 lemon
3 tablespoons of corn flour
Sea salt
Rapeseed/ olive oil
To serve:
1 small lettuce
2 large ripe tomatoes
4 wholemeal burger buns
Place the chickpeas and sweetcorn into a food processor. Pick the coriander leaves, then add half to the processor along with all of the stalks. Add the spices, lemon zest, flour and a pinch of salt, then pulse until combined, but not smooth.
Divide and shape the mixture into four equally sized patties. Heat the oven at 200C° and cook patties for around 20-25 minutes, or until they get golden brown, turning halfway.
Now you can add the burger to the buns and salad, and you can serve with fries, roast potatoes, or whatever you like!
